Understand how your sales data is captured, forecasted and presented in Nory.

Where do the sales figures come from?

Nory links directly to your EPOS system. Nory takes the restaurants net sales figure (Gross sales - VAT - Service charge = Net sales) and displays that on your sales insights page.

Using data from previous weeks sales Nory will predict future sales for you!

Nory’s AI-powered forecasting model predicts your restaurant’s sales at an hourly level, up to 35 days in advance. Unlike static forecasts, Nory continuously updates predictions as new sales data comes in, helping you plan staffing and inventory with greater confidence. Forecasts are tailored to each individual location, taking into account historical trading patterns, seasonality, holidays, and weather where relevant. While accuracy improves as more data is collected, the model is designed to be consistently more reliable than manual forecasting, supporting better operational decisions across your business.

Sales and Orders Forecasts

You can easily compare sales versus forecast using the main tile view. Switch to the Orders view to compare order volumes directly against your forecast.

Nory also provides detailed forecasts for:

  • Dine-in revenue

  • Pick-up revenue

  • Delivery revenue

  • Average check size

Each metric is automatically compared against the previous equivalent period (e.g. this week vs last week, this month vs last month).

By clicking on a specific day in the chart, you can view hourly sales versus forecast, helping you adjust staffing levels more precisely throughout the day. You can also select a specific location using the location selector in the top-left corner.

Why is my sales data in the EPOS different to Nory?

This can be EPOS specific, and can vary from EPOS system to EPOS system.

The usual reasons why the data might vary:

Open checks:

If a check is left open, its sales will not appear in reports until the check is closed. Once closed, the sales will be applied to the original business day on which the check was opened. Any associated inventory items will also be registered as sold on that same day.

💡 Best practice:

To keep your data accurate and up to date, ensure all outstanding checks are closed at the end of each day.

Different Business Day Cut-Offs:

Nory reports are based on a business day running from 4am to 4am. As a result, sales totals in your EPOS system may differ if you're looking at reports that use a different daily cut-off time.

Service Charge:

By default, Nory does not include service charges in sales totals. If you notice discrepancies where service charges appear to be included, this is usually caused by a configuration issue in the EPOS itself.
